Cappuccino Love

I love cappuccino and lattes, it's one of my ways of relaxing and taking a few minutes to breathe. A few of my friends from school will usually stop at SB after class and spend at least an hour sipping our favorite beverage. Mine is a Pumpkin Spice Latte, just love em. When I was in Pa. last month I found instant Pumpkin Spice Cappuccino mix. If you've read previous posts you'll know I came home with several vacuumed sealed bags in my suitcase. Well, I have been plowing through that stash and now it's almost gone. I could just cry, Yup, I love it that much. I have been searching the web trying to find a version that I could make, but to no avail. How hard could it be? I found the recipe below and it is quite good. In fact, I'm sipping some from my leopard print mug right this very minute. I added a little more of the cinnamon and nutmeg and tossed in a dash of pumpkin pie spice. I also put the coffee crystals in a plastic bag and crushed it into a powder. My mug is fairly large so I put in 4 heaping tablespoons. I really think the flavor is very good and it's a lot cheaper than the International Coffee. I hope you'll try this recipe. Here's hoping you find a quite spot and make some time to breathe.

PS I think it would be yummy with vanilla flavored creamer as well. Maybe they make pumpkin spice dry creamer. Now, that would be heaven in a mug. I'll have to check out my local store. They usually have these kind of flavors at this time of the year.

Ingredients

* 1 cup powdered nondairy creamer
* 1 cup instant chocolate drink mix
* 2/3 cup instant coffee crystals
* 1/2 cup sugar
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg

Directions

* Combine all ingredients. Store in an airtight container. To prepare one serving, stir 3 tablespoons mix into 6 oz. hot water. Yield: 3 cups dry mix.
